Corned Beef and Cabbage

This corned beef takes 5.5-6 hours to make, so plan ahead. The low and slow cooking makes the meat especially tender so you don’t want to rush this one!

Ingredients:

  • 1 4-5 lb Corned Beef (see here for recipe to make your own!)

  • 6-8 Medium Red Potatoes

  • Bag of baby Carrots

  • 1 Head of Cabbage, outer leaves removed and remaining cut into wedges.

  • Mustard for serving

  • Optional: Spices that came with meat, or if using recipe for homemade corned beef, the remaining spices from that.

Instructions:

  1. Rinse the corned beef and put it in a pot and cover with water. If you have the spices from making your own corned beef, or if the store bought one had a spice packet, you can add that into the pot. Bring to a boil, cover, then turn heat down to low. Simmer for 3.5-4 hours.

  2. Add the carrots to the pot, cover and simmer for 30 minutes.

  3. Add the potatoes the pot, cover and simmer for 1 hour

  4. Add cabbage to the pot, cover and simmer for 30 minutes.

  5. Serve with a side of mustard.
