Harissa Chicken

This is a very easy dish to make, but don't let the simplicity fool you, the flavors are amazing! Added bonus, this is a one pot meal!

Ingredients:

  • 1 lb chicken cutlets

  • 2 tsp extra-virgin olive oil

  • 3 Tbsp Harissa Sauce (this comes in various heats, I used the mild version for this one)

  • 3 cloves garlic, minced

  • 1/2 cup dry white wine

  • 1/2 cup heavy cream

  • 4 cups kale, thinly sliced

  • Salt and pepper to taste

 

Instructions:

  1. Pat chicken dry and sprinkle with salt and pepper.

  2. In a large skillet heat olive oil on medium-high until hot and add chicken. Cook chicken 3 minutes per side, or until cooked through, then remove to plate and cover to keep warm.

  3. To the skillet, add the harissa sauce and garlic and cook, stirring constantly, for 1 minute.

  4. Add the wine to the skillet and cook, stirring occasionally, scraping up the fond for 2 minutes or until mostly reduced.

  5. Lower the heat to medium-low and add the cream and the kale. Cook until kale just starts to wilt, about 3 minutes.

  6. Return the chicken, and any accumulated juices, to the pan and cook for another 2-3 minutes until kale has wilted. Stir occasionally and scoop the sauce over the chicken to fully coat.
