Kielbasa

 When I was a kid this was my absolute favorite dish my mom made, I would request it all the time!  It’s packed full of fresh veggies and the flavors are phenomenal, plus it makes a TON of food so it’s a great make-ahead meal for the week!  
 

Ingredients:

  • 1 Ring Kielbasa, sliced into 1/2” pieces

  • 2 Yellow Onions, medium diced

  • 1 Green Bell Pepper, medium diced

  • 1 Red Bell Pepper, medium diced

  • 2-4 Carrots, peeled and sliced into 1/2” pieces

  • Zucchini, sliced

  • 1 can tomato sauce

  • 1 can diced tomatoes

 
 

Instructions:

  1. Place all the ingredients into a large pot, add 1 cup water.

  2. Bring to a boil over high, once boiling reduce heat to low and simmer for 1 hour, stirring every 10-15 minutes.

  3. Enjoy!
