Roasted Salmon with Brussels Sprouts

 This is an easy, one pan meal, that is great for a weeknight!

Ingredients:

  • 1 lb Salmon filets

  • 1 lb Brussels Sprouts

  • 8 Cloves of Garlic

  • 1/2 Cup Dry White Wine

  • 2 Tbsp Olive Oil

  • 1 Tbsp Fresh Oregano, Roughly Chopped

  • Salt and Pepper to taste

  • Lemon Wedges

 Instructions:

  1. Preheat oven to 450 degrees.

  2. Dice two of the garlic cloves, halve the remaining.

  3. Halve the brussel sprouts and put in a medium bowl with the halved garlic cloves.

  4. In a bowl mix the olive oil, half of the diced oregano, the diced garlic, and salt and pepper.

  5. Drizzle 1 Tbsp of the oil mixture over the brussel sprouts and garlic and toss to coat.

  6. Arrange the brussel sprouts and garlic in a roasting pan and cook for 15 minutes.

  7. While the brussel sprouts are cooking, add the wine to the remaining oil mixture and stir to combine.

  8. Remove pan from oven and place salmon filets over the brussel sprouts. Pour the oil/wine mixture over the fish then sprinkle with the remaining oregano.

  9. Cook for 12-16 minutes, depending on the thickness of the fish, until cooked through.

  10. Serve with lemon wedges on the side.
