Sourdough Pizza

 Ingredients:

  • 1/2 cup Sourdough starter

  • 1 Cup Warm Water

  • 3 Tbsp Extra Virgin Olive Oil

  • 2 tsp Salt

  • 2 1/2 - 2 2/3 cups flour (I prefer bread flour) - if this is your first time making it I’d suggest 2 2/3 cups to make working with the dough easier.

  • Pizza sauce

  • Pizza cheese (I like the 365 brand pizza blend from Whole Foods)

  • Optional: 1 tsp pizza spice blend

Instructions:

  1. Wisk together starter, water, and olive oil.

  2. Slowly add flour and salt and stir to combine.

  3. Cover and let rest 30 minutes.

  4. Do three stretch and folds at 30 minutes apart.

  5. Let bulk ferment for 4-8 hours on the counter until roughly doubled in size.

  6. Divide dough into three rounds and put into containers with the seam side down and refrigerate for 12-24 hours.

  7. Preheat oven to 475 degrees.

  8. Spread a drizzle of oil on a piece of parchment paper large enough to fit a ~12” pizza

  9. Place the dough in the center of the parchment paper and gently pull to shape into a circle. Slide the parchment paper on a pizza stone or baking sheet.

  10. Spread sauce on the dough, just enough to have a thin layer.

  11. Put in oven and cook for 11 minutes.

  12. Remove from oven and sprinkle cheese over the sauce, you can make it as cheesy as you’d like! Put back in the oven and cook for 6 minutes.
