Asparagus Soup

 Ingredients:

  • 1 bunch Asparagus, cut into 1 inch pieces

  • 1 large Leek, white and light green portion only, thinly sliced and thoroughly cleaned

  • 1 small Onion, thinly sliced

  • 4 cups Vegetable Broth

  • 4 Tbsp Butter

  • 4 oz Creme Fraiche

  • Salt and Pepper to taste

 
 

Instructions:

  1. Melt butter in a pot.

  2. Add Onion and Leeks, season with salt and pepper, and cook stirring occasionally for 5 minutes.

  3. Add Asparagus and Broth and bring to a boil. Once boiling, cover and reduce heat. Simmer for 15 minutes or until Asparagus is tender.

  4. Remove from heat and let cool for a few minutes.

  5. Using either an immersion blender, or working in small batches a regular blender, blend until smooth.

  6. Add in Creme Fraiche and stir to combine.
