Ingredients:
- 1 bunch Asparagus, cut into 1 inch pieces 
- 1 large Leek, white and light green portion only, thinly sliced and thoroughly cleaned 
- 1 small Onion, thinly sliced 
- 4 cups Vegetable Broth 
- 4 Tbsp Butter 
- 4 oz Creme Fraiche 
- Salt and Pepper to taste 
Instructions:
- Melt butter in a pot. 
- Add Onion and Leeks, season with salt and pepper, and cook stirring occasionally for 5 minutes. 
- Add Asparagus and Broth and bring to a boil. Once boiling, cover and reduce heat. Simmer for 15 minutes or until Asparagus is tender. 
- Remove from heat and let cool for a few minutes. 
- Using either an immersion blender, or working in small batches a regular blender, blend until smooth. 
- Add in Creme Fraiche and stir to combine.
