Artichoke Chicken

This is probably my #1 go to recipe.  It’s very easy, makes enough for 4-5 meals, and is delicious!  I love making this one on Sunday to enjoy throughout the week.  

Ingredients:

  • 1 lb chicken breast, cut into bite size pieces

  • 2 Tbsp butter

  • 1 Tbsp Lemon juice

  • 4 Cloves of garlic, minced

  • 2 tsp dried basil

  • 2 cans of quartered artichoke hearts, washed and drained

  • 2 Cups of bread, broken into small pieces (I prefer to use sourdough)

  • 1/2 Cup shredded parmesan

  • 1/2 Cup chicken broth

  • 1/2 Cup dry white wine

Instructions:

  1. Preheat oven to 350 degrees.

  2. Arrange chicken in the bottom of an oven safe pot or roasting pan

  3. Heat butter in a skillet until melted, add the lemon juice, garlic and basil and cook stirring constantly for 1 minute.

  4. Add artichokes to skillet and cook, stirring occasionally, for 2-3 minutes.

  5. Add bread and cheese to skillet and toss lightly to combine, about 1 minute.

  6. Place artichoke mixture over chicken and arrange to fully cover layer of chicken.

  7. Pour the broth and wine over the chicken mixture.

  8. Sprinkle additional parmesan over mixture if desired.

  9. Cook, uncovered, for 40-45 minutes until chicken is cooked through and topping has slightly browned.
