Mom’s Pork Chops

Ingredients:

  • 1 lb Pork chops (preferably bone-in)

  • Extra Virgin Olive Oil

  • Green Bell Pepper, medium diced

  • Onion, medium diced

  • Salt and Pepper to taste

Optional:

  • Potatoes, medium diced, or mini potatoes

  • Red, Yellow, or Orange Bell Pepper

  • Zucchini, and/or summer squash

  • Broth (chicken, beef, or vegetable)

Instructions:

  1. Heat oil over medium in a skillet until hot, add the pork chops and cook for 2-3 minutes per side until brown.

  2. Add 1/2 cup water to skillet and bring to a boil, once boiling cover and reduce heat to low.

  3. Cook for 12-15 minutes, depending on thickness of pork.

  4. Remove cover and flip the pork chops, add the vegetables, and add water if it is dry. Cover and cook another 12-15 minutes until cooked though.

  5. Remove from heat and let rest, 5 minutes.

Optional:

  1. Replace water with broth for extra flavor.

  2. Add potatoes for extra starch. They will need to be added at the same time as the water and cooking time will need to increase to about 30 minutes for potatoes to soften.
