Ingredients

  1. Heat a drizzle of olive oil over in a pot over medium heat and add onion. Cook, stirring occasionally for about 8 minutes until onion just starts to soften.
  2. Add garlic and cook for 1 minute, stirring constantly.
  3. Add ground beef, breaking up as you stir. Cook until just browned, about 4 minutes.
  4. Add Chili powder, Cayenne Pepper, Red Pepper Flakes, and Cumin and cook, stirring constantly for 1 minute.
  5. Add Green Pepper, Bay Leaf, Tomatoes, and salt and pepper to taste, increase heat and bring to a boil.
  6. Once boiling, cover and lower heat and simmer for 2.5 hours.
  7. Add coffee and cover and let simmer for additional 1 hour.
  8. Add Kidney Beans and Basil and cook for about 10 minutes until heated through.
  9. Let rest for about 15-20 minutes.
  10. Serve with a spoonful of sour cream and grated cheddar cheese on top.
