Chicken with Eggplant and Mozzarella

A great, cheesy, one pot meal! The recipe makes a lot of food, so great for families or for meal prep!

Ingredients

Instructions

  1. Preheat oven to 350 degrees.
  2. Add chicken, basil, salt and pepper to a bowl and toss to combine.
  3. Add diced tomatoes and eggplant to a bowl and toss to combine.
  4. Arrange chicken on bottom of a lidded pot or dutch oven.
  5. Arrange half of the sliced mozzarella on top of the layer of chicken.
  6. Add the diced tomato/eggplant mixture on top of mozzarella
  7. Arrange the remaining cheese over the tomato/eggplant mixture.
  8. Cover and bake for 35-40 minutes until chicken is cooked through.
