Chickpea Salad

This is a super easy side dish, all you need to do is chop up the ingredients and combine them! This can also be a meal, great for days you don’t want to turn on the oven.

 Ingredients:

  • 1 15oz can Chickpeas

  • 3/4 cup fresh Basil leaves, roughly chopped

  • 3/4 cup fresh Parsley, roughly chopped

  • 1 clove Garlic, minced

  • Juice from one lemon

  • 1/2 cup freshly grated Parmigiano-Reggiano

  • 1 Tbsp Olive Oil

  • Salt and Pepper to taste

 
 

Instructions:

  1. Combine all the ingredients in a bowl, toss to mix.
