 
        
        
      
    
    Lobster Pasta Salad
This is a great, easy, recipe for the summer. Perfect as a side or even a main dish!
Ingredients:
- Olive Oil 
- 1/2 lb pasta, such as shells, penne, or farfalle 
- 4 ears of corn 
- 1 bell pepper, yellow, orange, or red, medium diced 
- 4 scallions, thinly sliced 
- 1 pint cherry tomato, halved 
- 1 lb cooked lobster meat, medium diced 
- 3/4 cup mayonnaise 
- 1/2 cup sour cream 
- 1/4 cup freshly squeezed lemon juice 
- 1/2 cup minced fresh dill 
Instructions:
- Cut off kernels from the corn. 
- Bring a large pot of salted water to a boil, add the pasta and a drizzle of olive oil and cook per instructions on box, adding the corn kernels with two minutes left to cook. 
- Drain the pasta and dump it and the corn into a large bowl. 
- Add the scallions, diced pepper, tomatoes, dill, and lobster and stir to combine. 
- In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, and salt and pepper to taste. Pour over pasta and stir to combine. 
- Cover and place in refrigerator for 4-6 hours. 
- Serve chilled.
